Our journey begins with our own Kalamon οlives, the most known and popular table olive variety worldwide, which are collected one by one from our trees.
Through traditional methods of cultivation, our olives are collected by hand when they obtain their famous brown-black shinning, sign of perfect ripening. Next, they are actioned in absolute natural process of further ripening and are being kept in a mixture of brine and red vinegar in order to preserve their juiciness and their characteristic luscious taste.
